Cauliflower Crust Pizza

2-1/2 cups 1/2-inch florets cauliflower (about 1/2 of a 5- to 6-inch-diameter head)
1/2 cup shredded Romano cheese (2 oz)
1 teaspoon Italian seasoning
1/4 cup pizza sauce
1/2 cup shredded cheese of your choice (2 oz)
Pizza toppings, such as sautéed veggies, pepperoni, precooked meats, sliced ripe olives
CAULIFLOWER CRUST PIZZA
- In a food processor, pulse cauliflower until it resembles rice. Transfer to a microwavable bowl. Cover; microwave on High for 5 minutes. Cool for 5 minutes. Wrap cauliflower in a clean dish towel and wring out as much water as you can over the sink. (This is the trick so the crust doesn’t fall apart.) Return cauliflower to bowl; stir in Romano cheese, egg and Italian seasoning.
- Line a BAKER’S SECRET® ESSENTIALS LARGE COOKIE SHEET with cooking parchment paper. Place dough in center of cookie sheet; use a spatula to spread to a 9-inch round about 1/4 inch thick.
- Bake at 350°F for 25 to 30 minutes or until edges are golden brown. Top with pizza sauce, cheese and additional toppings. Bake 8 to 10 minutes longer or until cheese is melted.
