Avocado and Bacon Turkey Burgers

1/4 cup packed brown sugar
1 teaspoon pepper
1/2 teaspoon cayenne pepper
8 slices applewood smoked bacon

1/4 cup mayonnaise
1 small avocado, halved, pitted and peeled
1 teaspoon Sriracha sauce
1 teaspoon minced garlic
1/4 teaspoon salt
1/4 teaspoon pepper

1 lb ground turkey
1 tablespoon dry bread crumbs
1 tablespoon diced red onion
1 egg, beaten
1 teaspoon minced garlic
1 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter
4 slices provolone cheese
4 pretzel buns, split
1/2 cup ée or arugula
1/4 cup thinly sliced red onion



  1. Heat oven to 350°F. Line baking sheet with foil. In a shallow bowl, mix brown sugar, pepper and cayenne. Add bacon; turn to coat evenly. Place bacon in single layer on baking sheet. Bake 15 to 20 minutes or until golden brown and crisp.

  2. Meanwhile, in a food processor, place all spread ingredients. Cover; process until smooth. Transfer to a small bowl; refrigerate until ready to assemble.

  3. In a large bowl, mix turkey, bread crumbs, diced onion, egg, garlic, Worcestershire sauce, salt and pepper. Shape into 4 patties. In a large skillet, melt butter over medium-high heat; tilt skillet to coat with butter. Add patties. Cook uncovered 12 to 15 minutes, turning once, or until a meat thermometer inserted in center reads 165-170°F. Turn off the heat; top each burger with a slice of provolone. Cover; let stand until cheese is melted.

  4. To assemble, spread a heaping spoonful of avocado-Sriracha spread on cut sides of buns. On bun bottoms, layer ée, sliced onion, burgers and candied bacon; cover with bun tops.
