Ultimate “Leftovers” Breakfast Hash

Ultimate “Leftovers” Breakfast Hash

2 tablespoons butter
2 to 3 medium yellow potatoes, peeled, cubed
½ medium yellow onion, finely chopped
1 clove garlic,minced
Pinch salt
¾ teaspoon paprika
1 cup cubed leftover meat
½ cup cubed leftover vegetables
½ cup shredded cheddar cheese
4 eggs
1¼ cups milk



  1. Heat oven to 350°F. Spray a SNAPWARE® 4 CUP GLASS RECTANGLE with cooking spray.
  2. In large skillet over medium-high heat, melt butter. Add potatoes; cook 5 minutes, stirring occasionally. Add onion, garlic and a pinch of salt; cook 5 minutes longer or until potatoes are tender and golden brown and onion is soft.
  3. Add paprika and leftover meat and vegetables. Cook until meat and vegetables are heated through. Remove from heat. Stir in cheese. Pour mixture into baking dish.
  4. In medium bowl, beat eggs and milk. Pour evenly over potato mixture. Bake uncovered 35 to 40 minutes or until set.
