Muffins are usually mixed according to the muffin method. It’s simple:

• Whisk the wet ingredients in one bowl
• Stir together the dry ingredients in another bowl
• Add the wet to the dry and barely mix them together

The batter should be lumpy, not smooth. Spoon into paper-lined or well-greased Baker’s Secret muffin pan cups, filling each one three-fourths full. Depending on the size of your muffin cups (mini, regular or jumbo), use an ice cream scoop or measuring cup for consistent results.


You’ll thank us later for being strict with these rules! Here are answers to few common mistakes or temptations:

•What if I overmix the batter? Your muffins will be tough, form tunnels inside and have peaks on top. Not ideal.

•What if I overfill the muffin tins? It’s tempting to think the more batter, the bigger the muffin top, but trust us here. Muffins will gently rise over the tops of the cups when they’re two-thirds to three-fourths full. Any more, and you’ll have a lopsided mess.

•What if the oven temperature is too high or too low? We know you want your muffins right now, but if your oven is too hot, the tops will brown before the muffin is cooked through. If it’s too cool (or you put them in before the oven is heated), the muffins may not rise sufficiently.

•The Sweet: 1/2 cup soft butter + 1/4 cup maple syrup + 1/2 teaspoon ground cinnamon
•The Savory: 1/2 cup soft butter + 1/4 cup grated Parmesan cheese + 2 tablespoons chopped fresh chives
•The Best of Both: 1/2 cup soft butter + 3 tablespoons honey + 3 tablespoons spicy mustard
