Pumpkin Spiced Happiness

Pumpkin Spiced Happiness

Temps are dropping, the leaves are starting to turn and you can pull that favorite sweater from the back of your closet. These classic signs can only mean one thing—pumpkin spice season is here!

Love pumpkin spice? Enjoy it in more than your coffee with a simple DIY spice mix that can be baked into pastries, blended into drinks, stirred into soup and more.

The secret behind making your own Pumpkin Spice Mix is pumpkin powder and vanilla powder. It’s unlikely you’ll find both in local grocery stores, but they’re readily available online on sites like Amazon. Order both items, then combine in this way:

1 cup dried pumpkin powder
1/4 cup ground cinnamon
1/4 cup baker’s (superfine) sugar or maple sugar crystals
2 tablespoons vanilla powder
3 teaspoons ground nutmeg
2 teaspoons ground ginger
1 teaspoon ground allspice

HINT: Easily grate whole nutmeg with the BAKER’S SECRET® ESSENTIALS NUTMEG GRATER.

Store prepared mix in an airtight container in a cool, dry place for up to 3 months.

In a blender, puree 1 to 2 tablespoons Pumpkin Spice Mix with 1/2 cup cold brewed coffee, 1/4 cup cream or half-and-half, 2 tablespoons pure maple syrup and ice for a frosty fall treat. Don’t forget to top it off with a swirl of whipped cream. Or spoon as much of the mix as desired into your favorite milk shake or smoothie.

Whisk store-bought eggnog with Pumpkin Spice Mix to taste. You’ll have a subtly sweet and frothy drink, kissed with the flavors of pumpkin, vanilla and nutmeg. Or share the mix, tied with a ribbon and a BAKER’S SECRET® ESSENTIALS 11″ ORANGE SILICONE WHISK.

Using the BAKER’S SECRET® ESSENTIALS 9″ MINI ICING SPREADER, mix equal parts softened cream cheese and Pumpkin Spice Mix together until smooth and creamy. Spread on cinnamon or plain bagels.

Heat together a 15-oz can of coconut milk, 3 tablespoons Pumpkin Spice Mix and 2 to 3 teaspoons curry powder until warm. Top with roasted pumpkin seeds. The BAKER’S SECRET® ESSENTIALS 12″ WOOD SPOON and a pot are all you need to stir up this simple soup.

Swap out 1/4 cup of sugar in your favorite quick bread recipe for 1/4 cup Pumpkin Spice Mix. Try the mix in banana bread, cinnamon bread or this Zucchini Banana Bread.

As with quick bread, the Pumpkin Spice Mix can be added to cake and cupcake batter. Or sprinkle it into the center of these Irish Cream Cinnamon Rolls, baking until golden in a BAKER’S SECRET® SIGNATURE™ 9″ X 13″ OBLONG COOK N’ CARRY PAN. With a tight-fitting lid included, this pan makes it easy to tote and share your pumpkin spiced sweets at holiday parties.

Or, substitute 1/4 cup Pumpkin Spice Mix for 1/4 cup of the sugar in your favorite butter cookie recipe and use the BAKER’S SECRET® ESSENTIALS COOKIE PRESS to make Pumpkin Spice Spritz Cookies.

Add a tablespoon or two of Pumpkin Spice Mix to your favorite frosting. Pipe into pretty swirls with the BAKER’S SECRET® ESSENTIALS PASTRY BAG.
