3 ripe avocados, peeled and coarsely chopped
Juice of 1 lime
1/2 teaspoon salt
1 small jalapeño, seeded and finely chopped
1/4 cup chopped onion
1 cup cooked small shrimp (peeled, deveined, tails removed)
1/2 cup coarsely chopped mango
1/4 cup crumbled goat or feta cheese
1/4 cup chopped fresh cilantro
1/2 chopped tomato

Fiesta Guacamole Salsa
- In medium bowl, toss avocados with lime juice and salt.
- Add jalapeño and onion; toss. Add shrimp, mango, cheese and cilantro; toss. Add tomato; toss lightly.
- Cover with plastic wrap; refrigerate at least 1 hour but no longer than 2 hours to blend flavors. Serve with tortilla chips.
