2 tablespoons butter
2 tablespoons all-purpose flour
3/4 cup whole milk 2 cups shredded Cheddar cheese (8 oz)
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1 tablespoon chopped jalapeño chile (seeded if desired)
JALAPEÑO NACHO CHEESE SAUCE
- In 2-quart saucepan, melt butter over medium heat. Stir in flour with whisk until mixture becomes a smooth paste. Slowly add milk, stirring constantly until smooth. Increase heat to medium-high; cook and stir until mixture begins to boil. Add cheese; stir until sauce is smooth. Remove from heat; stir in salt, cayenne and chile. Serve immediately.
