Spring Entertaining: 15 Ways to Serve Up Eggs
Springtime teems with special occasions—Easter, Mother’s Day, baby and bridal showers, and any given sunny Sunday in between. It’s no surprise then, in this season celebrating birth and new beginnings, that eggs—a centuries-old symbol of rebirth and fertility—are everywhere. Have a few extra on hand? IF YOU’RE STARTING WITH FRESH EGGS…

Gourmet Egg Bakes. Baked egg dishes are versatile, making them suitable for any occasion and taste. None require a suitcase of skill to make, and you can prep most of the ingredients beforehand. Try these three on for size:
- Frittatas are cooked in a cast-iron skillet or ovenproof pan. They’re started on the stove and finished in the oven. Any number of ingredients—chopped asparagus, cubed ham, green onion—can be mixed into the beaten egg mixture. - Stratas are similar to a quiche. Baked in a casserole dish, without pie crust, a strata is usually made with egg, milk, bread cubes, cheese and your choice of add-ins. - A la Carte. Start with a big batch of scrambled eggs. Keep them warm in a food warmer or slow cooker, but no longer than 2 hours. Serve with a variety of toppings. Some options: bowls of fresh herbs like chopped chives or julienned basil; crumbled cheeses like goat or feta; chopped fresh vegetables like tomatoes, sautéed mushrooms and roasted red peppers; and breakfast meats like chopped cooked bacon or ham.
- Go Totally Taco. Make a breakfast taco bar—alongside the scrambled eggs, offer warm tortillas, shredded cheese, a variety of salsas, cooked chorizo, avocado slices and sour cream.
