1 lb uncooked chorizo sausage
1 can (15 to 16 oz) spicy chili beans in sauce, undrained
1 cup chunky-style salsa
2 cups coarsely broken tortilla chips
4 medium green onions, sliced (1/4 cup)
1 medium tomato, chopped (3/4 cup)
1/2 cup sliced green pimento-stuffed olives
1 cup shredded Cheddar or Monterey Jack cheese (4 oz)
Additional salsa, if desired
1. Heat oven to 350°F. Crumble sausage into large microwavable bowl. Cover loosely and microwave on High 4 minutes; break up and stir. Cover and microwave 3 to 4 minutes longer or until brown; drain. Stir in beans and 1 cup salsa. Cover and microwave 2 to 3 minutes, stirring once, until hot.
2. In ungreased CorningWare® French White™ 2-1/2 Qt. Oblong Casserole with Glass Lid, place broken tortilla chips. Top with sausage mixture, onions, tomato, olives and cheese.
3. Bake uncovered 20 to 30 minutes or until hot and bubbly. Arrange tortilla chips around edge of casserole. Serve with sour cream, lettuce and additional salsa.
