Super-gooey brownie batter baked together with chocolate chip cookie dough. That’s the idea behind the brilliant “brookie” dessert. Like a giant cookie swirled with extra-chocolaty brownie batter, this sweet treat bakes up soft with a buttery crisp top.

If two desserts baked together sounds like double the work, think again! We’ve reworked the original idea to include one-pan prep. The brownie batter is stirred together in a PYREX® EASY GRAB 9.5″ PIE PLATE, microwaved until smooth, then mixed with store-bought cookie dough and baked until golden.

Top a hot brookie with vanilla ice cream and your favorite sundae toppings. Or let it cool and share pie-size slices at a party (or tuck them into a lunch box). This simple dessert will be welcome wherever it’s served!

  • GO GLUTEN FREE. Have someone who’s gluten free in the bunch? Converting this recipe is a cinch. Simply swap out the all-purpose flour for a gluten-free variety, such as tapioca flour or a gluten-free blend. Then be sure to use gluten-free cookie dough!
  • MADE HOMEMADE. If you have a favorite chocolate chip cookie recipe, go ahead and use it instead of the premade dough in our recipe. Just portion it out into 10 to 12 1-inch balls.
  • BIRTHDAY BITES. Sprinkle with rainbow candy sprinkles just before baking for a birthday-friendly dessert.
