Chili For A Crowd

2-1/2 lb ground beef or turkey
2 large onions, chopped (2 cups)
1 large green bell pepper, chopped (1-1/2 cups)
1 can (28 oz) diced tomatoes, undrained
2 cans (15 oz each) spicy chili beans in sauce, undrained
1 can (15 oz) black beans, drained, rinsed
1 can (15 oz) black-eyed peas, drained
1 can (14 oz) seasoned chicken broth with roasted garlic
2 cans (4.5 oz each) diced green chiles, undrained
1/3 cup cornmeal
1 tablespoon chili powder
1 tablespoon dried oregano leaves
2 teaspoons ground cumin
1 teaspoon salt



  1. In large skillet, cook beef over medium-high heat 5 to 8 minutes, stirring occasionally, until thoroughly cooked; drain.
  2. Spray 5- to 6-quart slow cooker with cooking spray. In slow cooker, mix cooked beef, onions, bell pepper, tomatoes, beans, black-eyed peas, broth and chiles. In small bowl, mix remaining ingredients; stir into beef mixture.
  3. Cover and cook on Low heat setting 7 to 8 hours or until chili is thickened and bubbling. Chili can be held on Low heat setting up to 4 hours. If chili becomes too thick, stir in up to 1/2 cup hot water. Serve with desired toppings:
• Shredded cheeses (such as Cheddar, mozzarella and/or Monterey Jack)
• Sour cream
• Crumbled cooked bacon
• Chopped green and red onions
• Chopped bell peppers
• Sliced fresh or pickled jalapeños
• Guacamole
• Chopped tomatoes
• Sliced ripe olives
• Oyster crackers
• Corn chips
