3 large avocados (about 1 lb)
1 tablespoon fresh lime juice
1/2 teaspoon salt
1 medium tomato, seeded, chopped
1 clove garlic, finely chopped
2 tablespoons finely chopped onion
1 to 2 teaspoons chopped chipotle chiles in adobo sauce (from 7-oz can)
1 teaspoon chopped fresh cilantro
1 teaspoon chopped fresh jalapeño
CHUNKY CHIPOTLE GUACAMOLE
- Peel and coarsely chop 2 of the avocadoes; place in large bowl. Add lime juice and salt; coarsely mash with pastry blender or fork.
- Peel and coarsely chop remaining avocado. Reserve 2 tablespoons chopped tomato for garnish. Stir chopped avocado, remaining tomato, the garlic, onion and chipotle chiles into avocado mixture.
