Ultimate “Leftovers” Breakfast Hash

2 tablespoons butter
2 to 3 medium yellow potatoes, peeled, cubed
½ medium yellow onion, finely chopped
1 clove garlic,minced
¾ teaspoon paprika
1 cup cubed leftover meat
½ cup cubed leftover vegetables
½ cup shredded cheddar cheese
1¼ cups milk

- Heat oven to 350°F. Spray a SNAPWARE® 4 CUP GLASS RECTANGLE with cooking spray.
- In large skillet over medium-high heat, melt butter. Add potatoes; cook 5 minutes, stirring occasionally. Add onion, garlic and a pinch of salt; cook 5 minutes longer or until potatoes are tender and golden brown and onion is soft.
- Add paprika and leftover meat and vegetables. Cook until meat and vegetables are heated through. Remove from heat. Stir in cheese. Pour mixture into baking dish.
- In medium bowl, beat eggs and milk. Pour evenly over potato mixture. Bake uncovered 35 to 40 minutes or until set.
