White Bean Harvest Salad
Ingredients

1 cup frozen mixed vegetables (peas, green beans and carrots)
1 can (15 oz) cannellini beans, drained, rinsed
1/3 cup olive oil
Grated peel and juice of 1 lemon
2 tablespoons cider vinegar
1 clove garlic, crushed
1 teaspoon Dijon mustard
1/4 cup finely chopped Italian (flat-leaf) parsley
Salt and pepper to taste

Instructions

WHITE BEAN HARVEST SALAD

  1. Cook mixed vegetables as directed on package; rinse with cold water. Toss vegetables and cannellini beans in a SNAPWARE® ENTERTAIN A BOWLS 5QT BEAN TURQUOISE.. In a small bowl, whisk oil, lemon peel and juice, vinegar, garlic, mustard and parsley. Drizzle over bean mixture; toss to coat. Season with salt and pepper. Cover and refrigerate up to 3 days before serving.
