World Kitchen Recipe | Blue Cheese Crusted Salmon
BLUE CHEESE-CRUSTED SALMON
YIELD: 2 servings
PREP TIME: 10 minutes
TOTAL TIME: 25 minutes
2 salmon fillets (about 1/3 lb each and 1 inch thick)
Kosher salt and freshly ground pepper to taste
2 to 3 tablespoons blue cheese dressing
2 tablespoons slivered almonds, toasted
1 tablespoon chopped fresh parsley
Place oven shelf in lower third of oven. Set oven control to broil. Line broiler pan with foil. Remove any bones from salmon. Place salmon, skin side down, in pan; sprinkle with salt and pepper. Brush dressing over tops and sides of fillets.
Broil 10 to 15 minutes or until salmon flakes easily with a fork. (If topping gets too brown, cover loosely with foil.) Sprinkle with almonds and parsley.
