BOOZY BROWNIE SHOTS

YIELD: 2 servings (with leftovers)
PREP TIME: 35 minutes
TOTAL TIME: 3 hours 20 minutes

Brownies
2/3 cup butter or margarine
5 oz unsweetened baking chocolate, cut into pieces
1-3/4 cups sugar
2 teaspoons vanilla
3 eggs
1/4 cup coffee-flavored liqueur
1 cup plus 2 tablespoons all-purpose flour

Boozy Pudding
1 cup whipping cream
1 box (4-serving size) instant vanilla pudding mix
3/4 cup milk
1/2 cup Irish cream liqueur
1/4 cup coffee-flavored liqueur

Heat oven to 350°F. Spray PYREX® EASY GRAB™ 8″ SQUARE BAKING DISH with cooking spray.

In 1-quart saucepan, melt butter and chocolate over low heat, stirring frequently; cool slightly. In medium bowl, beat sugar, vanilla and eggs with electric mixer on high speed 5 minutes. On low speed, beat in chocolate mixture. Beat in liqueur. Beat in flour just until blended. Pour into baking dish.

Bake 40 to 45 minutes or just until edges are browned and brownies pull away from sides of baking dish. Cool completely, about 2 hours.

Meanwhile, in medium Pyrex mixing bowl, beat whipping cream with hand mixer on high speed until soft peaks form; set aside. In another medium bowl, mix remaining pudding ingredients; stir with whisk 2 minutes or until smooth. Fold pudding into whipped cream. Cover and refrigerate until ready to assemble.

Cut brownies into 16 squares. Crumble 2 of the brownies. (Save remaining brownies to enjoy later.) In 2 (3-oz) shot glasses, place half of the crumbled brownies; top with a spoonful of pudding. Repeat layers once. (Refrigerate remaining pudding to enjoy later.) Serve brownie shots immediately or refrigerate; recipe can be made up to 4 hours in advance. Garnish with sliced strawberries if desired.
