About Chef Seamus Mullen

Seamus Mullen is an award-winning New York chef, restaurateur and cookbook author known for his inventive yet approachable modern Spanish cuisine. Born in Vermont and having cooked in prominent restaurants throughout Spain, San Francisco, and New York, Seamus first rose to national prominence in 2006 with the opening of tapas restaurant Boqueria, and again in 2009 as one of three finalists on the Food Network show Next Iron Chef. Seamus opened his first solo restaurant Tertulia in 2011; an instant success, Tertulia was awarded two stars from The New York Times, three stars from New York Magazine and was a finalist for one of the industry’s highest honors, the James Beard Foundation Award for Best New Restaurant. In November 2013, Seamus opened El Colmado, a classic Spanish tapas and wine bar at Gotham West Market, a new food hall in New York’s Hell’s Kitchen. He is currently at work on two new restaurant projects slated to open fall 2014; the restaurant in the forthcoming Mondrian Hotel in London, and a second outpost of El Colmado, to be called El Colmado Butchery, located in New York’s Meatpacking District. A lifelong athlete and avid cyclist who recently overcame years of health issues – the basis of his 2012 cookbook Hero Food – Seamus has also established himself as a leading authority on health, wellness, and the healing power of food. He is a frequent guest judge on the Food Network shows Chopped and Beat Bobby Flay, and is a contributing editor to SURFACE and Men’s Journal magazines.
